Broiled flounder with horseradish mayo

4 tablespoons mayonnaise1 tablespoon grated fresh ginger2 teaspoons prepared horseradish2 teaspoons dark brown sugar4 teaspoons soy sauce2 garlic cloves, minced12 oz. flounder fillets¼ cup panko breadcrumbstomatoes, sliced or dicedChopped fresh parsley
Combine first 6 ingredients in a bowl. Brush mayonnaise mixture on both sides of flounder fillets. Place fish on top of sliced or diced tomatoes in a single layer in a shallow baking pan. Sprinkle with breadcrumbs. Drizzle a little more of the mayonnaise mixture over the top of the breadcrumbs (or a little oil if you used it up).
Bake at 450° for 15 minutes or until fish flakes easily with a fork. Sprinkle with parsley.
