Potato Frittata

Ingredients
Ore-Ida Hashbrowns, 2 serving Olive Oil, 3 tbsp Scallions, raw, 4 medium (4-1/8" long) Egg, fresh, 8 large Parmesan Cheese, shredded, 3 tbsp
Directions
Preheat oven to 375.

Heat up oil in pan- cook 2.5 cups of hashbrowns with cut up scallions. Spray baking dish with cooking spray.

Beat 8 eggs together with cheese. Add salt & pepper to taste.

Put cooked hashbrown mix in bottom of pan. Spread evenly and cover with eggs.

Bake uncovered for 25-30 minutes
