Toddler Carrot Raisin Muffins

Ingredients
3 C. flour 2 tsp. cinnamon1 tsp. baking soda1 tsp. salt1 tsp. baking powder1/2 tsp. nutmeg1 egg, beaten1/2 C. sugar1/2 C. brown sugar2 C. shredded carrots2 mashed bananas (quite ripe is best)1/2 C. unsweetened applesauce2 T. vegetable oil1 T. ground flax seed3 T. water1 C. raisins
Directions
Combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. Set aside. Combine egg, sugar, brown sugar, carrots, bananas, applesauce, and oil. Mix flax seed and water in a small bowl and let stand for two minutes. Add to egg mixture. Make a well in the center of dry ingredients. Add egg mixture all at once to dry ingredients. Mix just until combined. Stir in raisins. Fill standard size muffin cups (either sprayed with cooking spray or with a cupcake liner) 2/3 full and bake at 350 for approximately 30 minutes or until toothpick comes out clean.
