Extra Veggie Beef Stroganoff

Ingredients
1 lb beef, cubed into 1" cubes1 1/2 C Chopped/Sliced Mushrooms1/2 C Onion, chopped1 1/2 Large Yellow Peppers, slices into strips3/4 C Water1/2 Package of McCormick's Beef Stroganoff Seasoning1/2 C Frozen Peas1 C 0% Fat Greek Yogurt1 C White, Long Grain Rice2 1/4 C Beef Stock1/2 Tablespoon Unsalted Butter
Directions
Cube beef into 1" chunks. Sear on high heat on all sides. Place beef in slowcooker. Add mushrooms, pepper strips, and onion. Mix 1/2 packet of seasoning mix with 3/4 C water. Pour over ingredients in the slow cooker. Cook 4 hours on low or 6-8 on high. In last 10-15 mins of cooking, stir in the frozen peas and cup of greek yogurt.
Heat the beef stock and butter to a boil. Add rice, stir and cover to cook on low 10-15 mins.
Serve one cup of stroganoff over 1/2 C Rice per serving.
