Pumpkin Broccoli Curry Souffle

Ingredients
1 1/2 C Pumpkin (puree/mashed)1C Broccoli (chopped)1/4 C 1% Milk2 T Madras Curry Paste Patak's1-2 Chives - finely chopped3 Eggs - separated
Directions
Prep the squash or pumpkin. Mix the pumpkin, milk, and curry paste. Add the egg yolks and whisk together. Fold in chives.
In a separate bowl, whisk the egg whites until stiff peaks form but still moist.
Add to the pumpkin mix 1/3 at the time.
Scrape into a souffle dish (8X12) and bake at 400F for 40min.
Make 4 servings.
