Veg Frittata

5 eggswater1 tsp olive oil1 cup red pepper, chopped1/2 cup spanish onion, chopped4 or 5 asparagus spears, sliced on diagonal5 0r 6 sliced mushrooms2 slices ham, optional for vegetarians1/2 cup shredded cheese1/4 cup soft goat cheese
Saute onion in 1 tsp of olive oil. Add red pepper, asparagus, mushrooms. Add ham, cut into pieces. Spread around fry pan.
Mix 5 eggs with 1/4 cup water. Pour into pan.
Drop cut pieces of goat cheese around mixture.
Top with mixed shredded cheese.
Cook on burner until edges are firm. Slide under broiler in over to finish and to brown the top.
