Sweet and Sour Chicken

1 lb. boneless and skinless chicken breast, cubed2 Tablespoon olive oil1 cup chopped onion1 cup green bell pepper strips1 cup red bell pepper strips1 Tablespoon corn starch1/4 cup Kikkoman lite soy sauce1 8-oz. can chunk pineapple3 Tablespoons apple cider vinegar3 Tablespoons packed brown sugar1/2 teaspoon ground ginger1/2 teaspoon garlic powder
Brown the chicken cubes in oil, then place on a plate and keep warm.
Saute onion, red and green peppers until crisp tender, then add the chicken back into the pan.
Mix the cornstarch and soy sauce together and add to pan.
Add the pineapple (with juice), vinegar, brown sugar, ginger and garlic powder to pan and stir to mix well.
Bring to a full boil, then reduce heat to low and simmer for 15-20 minutes, until sauce thickens.
Serve over cooked rice.

If there were 10 stars, this would get 10! Absolutely delicious. I will make it again. I heard that genuine sweet and sour is equal parts catsup, sugar and vinegar, so added 3 Tablespoons of catsup. (adds a bit more carbs, but turned out better than eating out! Thank you HappyWalker!!! - 9/8/10

AWESOME! This was the best meal I have made since I started cooking at home again. Aaaaand it was the first time my husband actually ate some of my food since I have been cooking low calorie foods. All I changed was I added 1/2 c water durring the simmer. And thats saying alot for me. - 1/16/09

Missing ingredient: no vinegar in the ingredients list, but it calls for vinegar in the directions, so I just added a teaspoon of apple cider vinegar. Also, this recipe needs about 3/4 cup of water to add, or the mixture thickens way too much during the final cooking. Tasty overall. - 6/22/07
