Shrimp Creole Bake

Ingredients
2 c. water1 1/4 c. uncooked white rice2 onions, diced2 c. sliced mushrooms5 carrots, sliced1 green pepper, diced1 1/2 c. celery, diced1 zucchini, sliced1 15 oz. can seasoned tomato sauce1 16 oz. can whole peeled tomatoes, crushed2 tbsp. butter1 4 oz. jar chopped pimentos1 1/2 lbs. cooked medium shrimp, peeled and deveined2 tsp. chili powder
Directions
In a saucepan bring water to a boil. Add rice, reduce heat, cover and simmer 20 mnutes. Preheat oven to 350. Saute the mushrooms, carrots, onions, green pepper, celery, and zucchini in butter until tener. Add all tomatoes, tomato sauce, pimentos and shrimp. Stir in rice and chili powder. Pour mixture into a 9 x 13 inch casserole dish. Bake for 1 hour.
