Cheesy Cauliflower Pancakes

Ingredients
1 Head Cauliflower1/2 c Egg Beaters1/2 c Kraft Fat Free Cheddar Cheese1/2 c Panko CrumbsCooking spray
Directions
Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, & panko.

Spray a pan with cooking spray and heat over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side.

Serving Size: Makes 8 pancakes

    Yum!!! I love potatoes and hate cauliflower, but these were amazing! I'm doing gluten-free so I substituted gluten-free bread crumbs for the panko. This is a great low-cal alternative to potato pancakes or hash browns. Thanks for sharing! - 5/14/13
