225g (8oz) light butter,125g (4 1/2oz) Caster Sugar,50g (1 3/4oz) Ground Rice,225g (8oz) Plain Flour,Pinch of salt
1. Preheat the oven to 180oc/160oc in a fan assisted oven.
2. Place butter, sugar and ground rice on a board, and draw together with your fingertips.
3. Combine flour and salt. Add them in four batches so that you are mixing the flour in slowly, which ensures the mixture doesn't become too tough.
4. Roll out mixture until 5mm thick. Use a 5cm/2inch cutter to cut out the biscuit shapes.
5. Place on greaseproof paper and bake for 15 minutes.
Serving Size: Makes 24 biscuits
