Low-fat Low-Carb Red Fish Chowder

Ingredients
1 tsp olive oil1/2 medium onion chopped1/2 cup carrot chopped1 clove garlic1 14.5 oz can diced tomato29 oz water2 tsp Badia Complete Seasoning1 cup chopped acorn squash1 cup frozen Italian Blend vegetables1 filet of cod fish, boneless skinless cut in chunks2 filet of perch, boneless skinless cut in chunks
Directions
Put the first 4 ingredients in a sauce pan. Saute for 5 minutes. Add canned diced tomato, Badia Complete Seasoning, acorn squash, frozen mixed vegetables, and water, simmer for 30. Add pieces of fish, simmer for 10 minutes. Stir occasionally through out cooking process.

Serving Size: Makes 4-6 servings. I'm a Bariatric patient so this is at lest 6 servings for me.
