3.5 c pumpkin seeds (shelled, raw, unsalted)2 teas. canola oil1 Tbsp tamari sauce, organic low sodium1/4 - 1/2 teas. cayenne (red) pepper (depending on how spicy you want them!)
Heat oil in a large (12-in) nonstick fry pan over medium heat. Add pumpkin seeds and saute, stirring often for 5 or more minutes or until nuts begin to sizzle and pop. Immediately drizzle tamari over mixture and sprinkle with cayenne and lemon juice. Mix very well. Then, remove from heat. Cool for a few minutes and serve. Leftovers can be stored at room temperature for at least one week.
