Turkey Taco Salad

Ingredients
8 ounces ground turkey breast1 teaspoon Chef Meg's Taco Seasoning6 cups romaine lettuce, chopped1 cup red kidney beans, rinsed and drained1 onion, chopped1/2 cup shredded low-fat cheddar cheese2 ounces tortilla chips1/2 cup salsaOptional toppings: Greek yogurtDiced avocadoChopped black olives Bell peppers
Directions
Brown turkey and add the taco seasoning.
Divide the lettuce, beans, and onion among four large bowls, then top with the turkey and cheese.
Crush the tortilla chips and add to the top of the salads, or serve on the side.
Add salsa, top with additional ingredients as desired (nutrition info not calculated) and enjoy!

    Tried turkey in it and didn't care for it at all. However, lean hamburger or chicken breast is something that we love in our taco salads. The red kidney beans are awesome in it! Rating based on the turkey part of the recipe. - 6/10/12

    This was great, but I made a few alterations. I used black beans, instead of kidney (which are not my favorite), and sauted the bell peppers and onions. As additional toppings, I had lowfat yogurt, and avocado- yum. I think you could have done without turkey, and it still would have been delish. - 8/21/12

    Make w/Chef Meg's Taco seasoning, or just use chili powder. Can sub black beans for kidney beans. Can sub buffalo meat for turkey. - 7/18/14

    I made this and liked it, BUT it sure would have been nice to have all the ingredients for the recipe listed in the recipe so it would have been easier to just follow the recipe. Wish she had thought about that so i didn't have to rewrite it. - 6/10/12

    My mouth is watering! I'll need to use some other beans though - black-eyed sounds good, or navy beans. My stomach can cope with these, but not kidney beans.

    Great reminder for my empty nest one person household. Preparation size can be easily modified for one or two. For years, I used this form of recipe (varied the protein as I felt the urge or what type was in the refrigerator/pantry). It is a quick meal that the family loved and nutritious. - 6/10/13
