Creme Anglaise

Ingredients
Whole Milk / Vitamin D, 1 cupVanilla bean, 1/4 beanHeavy Whipping Cream, 1 cupGranulated Sugar, 4 ozEgg Yolk, 6 large
Directions
Scald the milk, cream, vanilla and half the sugar. Stir together the yolks and remaining sugar, and immediately add in half the milk mixture, and ounce or two at a time. Return to the pot with the rest of the milk mixture and heat until it coats the back of a spoon. Strain and cool over ice before refrigerating.
