Chuck's Veggie Stew

Ingredients
2 medium onions, chopped4 cloves garlic, minced3 medium carrots, chopped2 medium zucchini, chopped3 cups chopped sweet potato2 medium stalks celery, chopped2 chicken or beef bouillon cubes2 tbsp olive oil2 cans whole tomatoes1 can peas1/2 cup chopped fresh basil1/4 cup chopped fresh oregano4 cups water
Directions
Heat oil in large pot and lightly saute' onions and garlic. Add tomatoes and water, bouillon cubes, carrots, celery, and sweet potatoes.
Bring to a boil, reduce heat and simmer for about 10 minutes.
Then add zucchini, peas and chopped fresh herbs.
Cook for an additional 5 minutes or until all the veggies are done to your liking.
This is very thick - more like stew than soup.
You can add canned or fresh fish, pinto beans, chickpeas, grated parmesan etc. if you want to increase the protein values.
