Ingredients
2 cups cubed potatoes2 cups water1 cup chopped carrots1/2 cup chopped onion2 chicken bouillon cubespepper to taste
Directions
Cook potatoes, carrots, onion, and water until tender.
Add bouillon and pepper.
Simmer 10 minutes.

    This was an easy, quick recipe. The potatoes pretty much disintegrate in the soup, which gives it the consistency I was looking for without needing to use a food processor. However, I think two bouillon cubes may have been too much. It kind of overpowered the soup. Will try again with less bouillon. - 11/23/11
