Beef & Spinach Stew

1 Tbsp Olive oil1 Onion chopped500g Stewing beef 200g of spinach1 garlic clove crushed400ml stock (beef or veg)2 Tbsp Tomato pureeSqueeze of lemon juice1 Tbsp Cornstarch to thicken - mixed with some waterSalt & pepper to tasteDried herbs of choice
Heat olive oil in pan on medium heat and add onion, cook until golden (8mins). Add garlic and fry for a further 2mins.
Add the beef and cook until browned all over, add stock, tomato puree, salt/pepper and cook under lid for 2 hours on low heat until beef is tender.
Add lemon juice, thicken with starch, check seasoning and stir in the spinach. Add any dried herbs you wish at this stage (rosemary/thyme/parsley are nice).
Stir and Serve
Serving Size: Serves 4
