Crunchy Oat Chicken Tenders

Ingredients
1/2 cup fat-free skim milk 1 tsp garlic powder 1 tsp paprika 2 tsp dried parsley 1 tsp poultry seasoning 2 pound uncooked boneless, skinless chicken breast tenders1/2 cup rolled oats 1 cup whole wheat flour 1 egg white(s)
Directions
Preheat oven to 375 degrees. In a pie plate, mix skim milk and egg white. In a second pie plate, mix seaspnings, flour and oatmeal. Line a cookie sheet with foil and coat with cooking spray. Dip tenders into milk mixture, then dredge in flour mixture and place on cookie sheet. Spray tenders lightly with cooking spray and place in oven for 25 minutes. Serve two chicken tenders per serving with your favorite dipping sauce.

    This was really good! I didn't have any poultry seasoning, though, so I added half a teaspoon each of thyme and sage, and a dash of cayenne. Yummy! - 2/2/08

    I've done that as well. I haven't been able to find the poultry seasoning I had when I first started making these tenders. It's also good with grill seasoning.

    For a little more spice, add some hot sauce to the milk/egg mixture.

    I didn't have rolled oats, so I used steel cut oats and no flour (my husband is allergic.) These turned out great! My husband loved them - he says we should make them for company. They had a really unique flavor and texture so we will definitely be making again. - 7/27/11
