Fish Cakes Drizzled with Butter

Ingredients
2 small potatoes1/2 cup skim milk1 pound sole fillets4 slices "diet" bread dried (not toasted) and grated2 tbsp chopped fresh parsley2 tbsp freshly grated parmesan cheese2 tbsp finely chopped yellow onion2 tbsp minced celery1/4 tsp garlic powderSalt and pepper to taste1/8 tsp cayenne pepper2 medium sized egg whites, beaten3 tbsp butter or margarine
Directions
preheat oven to 350*
boil potatoes until tender. Drain. Add milk mash and set aside.
while potatoes are cooking, place fishin one layer in a shallow baking dish. Tightly cover dish with foil and bake for 20 to 25 min or until fish is cooked.
flake fish and add to mashed potatoes. Mix in bread crumbs, parsley, cheese, onion, celery, garlic powder, salt, pepper, cayenne pepper and egg whites Blend well.
form mixture into 4 uniformly sized patties (each patty should be about 3/4" to 1" thick. Place on a cookie sheet and bake for 25 min. (approx)
Melt butter in a small saucepan. Drizzle over patties and serve immediately.
