AJ's Blueberry Muffins

Ingredients
1 cup unsweetened blueberries, fresh or frozen1 cup all-purpose flour3/4 cup whole wheat flour2-1/2 tsp baking powder1/3 cup Splenda1 large egg1/4 cup unsweetened applesauce1/2 cup skim milk
Directions
Preheat oven to 400*F. Lightly spray a muffin tin with vegetable spray.
Wash and drain blueberries.
In a large bowl, mix flour, baking powder, and Splenda together.
In a small bowl, whip egg, applesauce, and milk.
Pour egg mixture into dry ingredients. Mix just enough to blend.
Stir in blueberries.
Pour 2/3 cup batter into each muffin tin. Bake 17 minutes or until golden brown.
Let muffins cool before removing from pan.

    I, too, had to add more liquid. I added water though so as to not add more calories. Not very sweet, maybe add a bit of cinnamon. Will try again, but with adjustments. - 2/3/08

    I've made these twice. Both times with cranberries however. (Need to try with blueberries!) 1st time I had no WW flour. They were good! Ate them all! 2nd time I had the WW flour and I added about 1/4 cup of canola oil cuz I was bringing them to a bake sale. They were a real hit! Will make agai - 11/9/07

    Very healthy, but I think the recipe has a mistake in it- the batter was too thick to pour out, I had to free-style add more milk and applesauce. THey weren't very sweet, but were very very dense. Not sure if they turned out poorly becuase of the substitutions I had to make. - 3/7/07
