Raisin Bran Muffins

Ingredients
2 cups all bran3 cups raisins3 cups white sugar1 cup shortening4 large eggs2 cups buttermilk5 cups white flour1 tsp. salt5 tsp. baking soda
Directions
Mix bran with 2 cups boiling water, set aside. Cover raisins with boiling water, till puffy then drain. Combine sugar with shortening, add the eggs and buttermilk to this. Combine the flour, salt and baking soda. Mix this with the shortening, egg, buttermilk mixture. Add the bran and raisins last. Bake @ 350 for 20 min. (test for doneness). This mix ( unbaked) can be kept in a container refrigerated for up to 6 weeks. Fills a 4 litre ice-cream pail. Works best when the batter is cold.
