1 540 ml can Chick Peas1 540 ml can Six Bean Blend (Kidney beans, black eye peas, white kidney beans, romano beans, baby lima beans, chickpeas) (Can substitute for other can of beans or bean mix)1 Med. Red Bell Pepper3 Sprigs Parsley2 Cloves Garlic4 Tblsp. Extra Virgin Olive Oil2 Tblsp. Balsamic VinegarSalt & Pepper to taste
1. Drain and rinse beans. Put in big mixing/serving bowl.
2. Chop bell pepper and parsley. Add to beans.
3. Mince Garlic. Add to bean/pepper mix.
4. Add olive oil, balsamic vinegar, salt & pepper.
5. Place in fridge to cool.
Serving Size: 4 - 1 1/3 cup servings
