Paul's Coconut Shrimp

Ingredients
1 egg, beaten1/4 c flour24 medium shrimp (~.5 lb)- peeled & deveined3/4 c coconut (flaked), chopped3/8 c. Nabisco Ritz crackers, crushed (~12 crackers)
Directions
Preheat oven to 450 degrees. Spray a large jelly roll pan with nonstick spray.
Put flour on one small plate. Put egg on another plate & beat. Put coconut & crackers on third plate. Dip shrimp in flour, then egg, and then coconut mixture. Put in pan. Repeat.
LIghtly spray shrimp with nonstick spray. Bake about 5 minutes, until golden brown. Flip over, spray and bake another 5 minutes.

Serving Size: Makes 3 servings- 8 shrimp each
