raw coconut macaroons

Ingredients
1/2 C coconut water5 large pitted dates12 C large dry apricot halves1/2 C each cashews and almonds1/2 bar (1.75 oz) good quality dark chocolate1T chia seeds1T flax2T coconut oil1/2 C coconut, dry, unsweetened, grated
Directions
Mix first 5 items in a food processor; let sit at least a half hour for dry fruit to absorb coconut water. Grind ingredients together until it is a crumbly consistency with no large nut pieces remaining.
Transfer mixture to a bowl; add next 3 items and mix well.
Measure 1T mixture and roll into a ball; roll in dry coconut. Store in the fridge.

Serving Size: Makes 28 tablespoon-size macaroons
