Crab and Pasta Salad with Tumeric Dressing

8 oz. dry Brown Rice Pasta2 stalks celery chopped1 english cucumber peeled sliced and quartered1 cup washed cherry tomatoes8 oz Imitation Crab meat cut into cubesTumeric Dressing:2 Tbs Light mayonaise1 Tbl olive oil1 Tb granulated sugar1/4 tsp. garlic salt1/4 cup distilled white vinegar (or white wine vinegar or rice vinegar)1 Tbl dry parsley1 tsp tumericA few turns of fresh black pepperOne head Romaine Lettuce
Bring to boil one quart of water and add pasta. Stir for 2 minutes then cover and turn off heat.
Set for 20 minutes.
While the pasta is setting, chop celery and cucumber and add to very large bowl. Then add rinsed tomatoes and imitation crab meat that has been chopped into spoon size pieces.
In small bowl, wisk salad dressing ingredients.
Then pour over ingredients of large bowl and stir gently.
When the pasta is ready, drain rinse and add to large bowl and stir again.
Cover and refrigerate for one hour.
Serve over washed lettuce leaves.
Serving Size: Makes 5 or 6 large salad servings
