1 1/2 c cherries1 c old fashioned oats1/2 fage 0%1/2 c skim milk1 tsp almond extract1 1/4 cup whole wheat flour1 t baking powder1/2 t baking soda1 t salt3 egg whites beat till frothy1/4 c unsweetened applesauce1/3 c brown sugar2 Tbsp Splenda
Preheat oven to 375 degrees. Spray muffin pans with nonstick spray or line with paper liners. Wash cherries, and cut in 1/2 to remove pits. In a small bowl, combine the milk and fage till smooth, add oats, and let stand at room temperature for five minutes. In a medium bowl, combine the flour, baking powder, baking soda, and salt. In a large bowl, use a mixer to beat the eggwhites till frothy, add applesauce, splenda, and brown sugar and beat till well mixed. Add the almond extract and combine. Blend in the oat-milk mixture. Stir in the flour mixture just to combine. Fold in the cherries. Fill muffin cups 3/4 full. Bake 15 minutes or until a toothpick inserted into the center comes out clean.
