1 tbsp extra virgin olive oil2/3 cup liquid egg whites1 Italian tomato1 cup turnip greens (can be substituted with baby spinach)1 golden pearl onion1 tsp crushed garlic0.5 tsp crushed red pepper
Stir the veggies first in the olive oil.
When they are to taste, add the 2/3 cup egg whites.
When the egg whites are solid enough (for your personal taste) slightly stir everything together and slide on a plate.
