Lisa's Chicken Goulash

Ingredients

4 Chicken Breast, boneless, skinless 1 Green Peppers sliced1 Onions sliced thin1 pkg Mushrooms (1.5 cup slices)1/4 cup Zucchini thinly sliced2 cup Tomato Sauce 1 tspn (heaping teaspoon) minced garlic
1. thinly slice pepper, zucchini & onions
2. cut chicken into slices
3. if mushrooms are not bought sliced, start slicing!
4. in large skillet heat up garlic over medium heat
5. before garlic gets browned, add pepper, zucchini, onions & mushrooms. do not cover, let steam escape
6. when veggies get soft, add tomato sauce
7. lower heat to a low setting (if your stove top uses numbers I suggest 2) let simmer for about a minute
8. add chicken. depending how thin chicken was cut, it should cook in about 7 minutes
9. at your discretion, season to your taste (I used garlic powder, sea salt & marjoram) (not included in nutritional values)
10. serve over pasta, couscous or carb of your choice (also not included in nutritional values)
11. enjoy!
