Curried Chicken Shirataki Noodle Pot

6 oz Chicken Breast1 Cup sliced onion1 Cup cherry tomatoes, sliced in half Tofu shirataki noodles - angel hair style, 1 package1 tbs curry powder2 tsp ground ginger2 TBS soy sauce2 TBS rice wine vinegar1 tsp sesame oil2 TBS half and half
In a nonstick skillet saute onion, tomato, and chicken together.
Add curry powder and ground ginger to skillet. Cook for about 3 minutes.
Add sesame oil, soy sauce, and vinegar. Stir well and simmer for about a minute.
Next, add the rinsed and drained Shirataki noodles. Stir the noodles around with a fork to help separate them and incorporate them into the sauce. Simmer for 5-10 minutes or until chicken is cooked through.
Finally, add the half and half and stir well.
Serving Size: Makes 1 - 2 servings
