Banana Fritters

Ingredients
3 egg whites, beaten2 medium bananas, mashed1/2 cup low fat soy milk1/2 cup water1/4 cup crude bran (Miller's Bran)1/2 cup whole wheat flour1/2 cup soy flour1 TBS baking powder1 tsp ground cinnamon
Directions
Combine the first 5 ingredients, whisking after each addition. Sift remaining 4 ingredients together and combine with wet ingredients, stiring well.

Pre-heat a non-stick pan or griddle and spray with cooking oil. Pour about 1/3 cup batter for each fritter and cook until lightly browned on both sides. Respray with cooking oil when adding more batter.

Can be made ahead and kept in refrigerator or freezer and then reheated in a microwave.

Makes 8 fritters.
