Matzo Crisp Chicken Cutlets

3 chicken breasts, halved1 cup Matzo Meal1/2 cup nonfat milk1 tsp white vinegar1 tsp saltHerbs/spices
Preheat oven to 400F. Line a cookie sheet with foil, place wire cooling rack over cookie sheet, spray rack with nonstick cooking spray.
Put vinegar and milk in small bowl, let rest for 1-2 minutes until congealed into buttermilk.
Mix Matzo Meal, salt, and preferred spices, spread on a plate for easy coating.
Dredge chicken through milk mixture, coating both sides; dredge in the crumbs.
Place chicken on rack over pan. Bake for 35 minutes on centre rack.
