Ham &egg muffins

Ingredients
3 slices Farmland 96% lean ham3 cups eggbeater original12 Tbs Kraft fat free cheddar cheese shreddedcoarse ground black pepper (optional)Pam cooking spray
Directions
Liberally coat muffin pan with cooking spray. Cut the sliced ham in 4 ths, then cut each piece in half. Drop 2 of these small pieces in each recess. Top with 1 tbs shredded cheese. Put 1/4 cup eggbeaters in each recess, filling just to rim. Top with pepper, if desired. Bake at 350 degrees for 20-25 mins, til muffins are dtanding tall and lightly browned. Remove from oven and cool in pan.

    I ate 2 for breakfast this morning, with a 1/2 tsp hot salsa on top. High protein, low calorie, low carb, excellent for between meal snack. You can also change up the fillings, I think of them as mini frittatas!
