Ingredients
1 Can Libby's Whole Kernel Yellow Corn, drained1 can Black Beans rinsed and drained1 can Ro*Tel Diced Tomatoes and Green Chilies, drained3 oz grilled chicken tenders, diced
Directions
Mix all ingredients. Makes 4 each 1 1/4 cup servings. Great with a few tortilla chips crumbled and mixed in.

    OK, so I didn't make exactly this, but it was my inspiration. I am a vegetarian, so I used Lightlife Chik'n Strips, & I used Kuner's Southwestern Black Beans. I ate it hot, & instead of the canned tomatoes I added salsa after. I ate it w/whole grain tortilla chips. YUM!! - 3/29/08
