Carrot Fruit & Nut Protein Packed Muffins

3/4 cup whole wheat pastry flour3/4 cup quinoa flour1.5 cup oats1 Tablespoon flaxseed2 tsp baking powder2 tsp cinnamondash of nutmeg1cup brown sugar4 Tablespoons vegetable oil2 medium banana mashed1 cup plain or vanilla greek yogurt1/2 cup unsweetened apple sauce1 cup finely grated carrots1 cup dried cherries1 cup chopped nuts (I use almonds)
Mix dry ingredients in a bowl. Add remaining ingredients and mix well. Spoon into greased muffin pan and bake at 400 degrees for 18-20 minutes. Even without eggs, these muffins are so moist and full of yummy textures from all of the “sneaky” ingredients!
