Delicious Shrimp and Veggie, Non-Asian "Stir-fry"

Ingredients
3 Tbs. Olive Oil1 Tbs. minced garlic (jar)2 onions, diced1 eggplant (diced)2 zucchini's, diced2 yellow summer squash, diced2 cups of fresh mushrooms, sliced2 yellow peppers2 red peppers1 green pepper1 lb of raw shrimp1/4 cup of Marsala or other red wine1/2 cup of white wine3 Tbs. Badia (brand) Complete Seasoning (found in ethnic isle at most groceries)3 Tbs. Old Bay Seafood Seasoning2 tsp. Black Pepper
Directions
Put olive oil in pan on med/hi heat and then add diced onions, all diced peppers, squash, zucchini and eggplant. Put in minced garlic and toss all together. Add both red and white wine then mix in the seasonings. (You can add more or less of each, to taste. These measurements are approximate.) Cook for about 25 mins or until 5 minutes BEFORE desired veggie crispness. Add the shrimp and mix together and cover for about 5 more mins.
