Mediterranean Brown Rice

Ingredients
Directions
brown rice, cauliflower, broccoli, chickpeas, olives, tomatoes, lemon juice, olive oil, salt, feta
Cook rice as directed. Chop broccoli & cauliflower, rinse chickpeas (1 can) and add to bowl w/ broccoli & cauliflower. Toss with 1.5Tbsp of olive oil. Sprinkle with salt. Roast in oven at 375 for 30 minutes.
Cut tomatoes in half, place facing up on roasting sheet, drizzle with .5 tbsp olive oil, sprinkle with salt. Roast at 275 for 1.5 hours.
Combine everything when cooked. Add 2 oz. feta cheese, juice of 1/2 a lemon. Toss & enjoy!
Serving Size: Makes 5 1-cup servings
