Tofu Tikka Masala

Ingredients
1 large package Firm Tofu1 cup non fat plain yogurt (I prefer Greek)4 tsp cumin2 tsp cayanne 1 Tlb fresh minced ginger1 Tbl lemon juice1 tsp cinnamonsalt and peper to tastewood skewers 1 Tbl unsalted butter1 clove garlic1 Jalapeno1 can (8oz) tomato sauce1 cup fat free half and half1/4 cup chopped fresh cilantro
Directions
Cube tofu into 1 inch cubes and place in covered container. Add yogurt, lemon Juice, 2 tsp ground cumin, cayenne, cinnamon and ginger. Salt and pepper to taste. Toss well. refrigerate for at least and hour ( I let it sit all day).
Cook rice as directed by manufacturer.
Place tofu on skewers (about 10 pieces per skewer) and cook under the broiler or on the grill about 5 to 8 minuets per side or until golden brown.
In a sauce pan melt butter. Saute garlic and jalapeno for a min. Add 2 tsp cumin, paprika and salt to taste. Stir in tomato sauce and fat free half and half. simmer sauce until it thickens (about 10 min). Serve as suggested. (1cup rice with 3 to 4 skewers and a half cup sauce). Garnish with cilantro.

Serving Size: 1 cup rice and 3 skewers with 1/2 cup sauce
