Pumpkin Protein Pancakes

1/4 cup rolled oats1 scoop MRM vanilla protein powder1/4 tsp Hain Featherweight baking powder1/4 tsp xanthan gum (optional)1 tsp cinnamon1/4 tsp pumpkin pie spice20 drops liquid stevia1 tsp vanilla extract2 tbsp pure pumpkin2 egg whites
Grind oats into flour.
Mix oats together with all dry ingredients.
Whisk all wet ingredients together, then combine with dry ingrfedients.
Spray a small pan with non-stick spray and heat over medium heat.
Pour batter in pan in 1/4 cup servings.
Cook 2 minutes per side.
Serves 1: Makes 3-4 small pancakes (1/4 cup each)
Waffles: pour batter into waffle maker and cook according to your machine.
Muffins: pour batter in muffin tins sprayed with non-stick spray and bake at 375 for 15-20 minutes.
