Red Lentil Corn Chowder with Kielbasa

Ingredients
1 tbsp coconut oil or 1/2 cup water2 tbsp shallots, finely chopped (optional)1 celery stalk, small dice1 red bell pepper, choppedpinch sea salt1 tbsp cumin1 tsp oregano1 tbsp curry powder1 cup dried red lentils, sorted for stones and washed6 cups water2 cups fresh corn kernels (or frozen is fine)3 tbsp white miso, dissolvedsmall handful parsley, chopped1 tbsp red wine vinegar
Directions
I put all ingredients in a crock pot for 4 hours on high. Stirring occasionally.
