Cheese Sauce (for vegetables)

Ingredients
2 Tbsp. butter2 Tbsp. flour1/4 tsp. salt (optional)1/8 tsp. pepper1 C. skim milk1/2 C. grated Cheddar cheese (sharp cheddar is best)
Directions
Melt butter over low heat. Blend in flour, salt & pepper. Cook over low heat, stirring constantly until smooth & bubbly. Remove from heat. Stir in milk. Bring to a boil stirring constantly. Boil 1 minute. Stir in cheese until melted.
Makes about 12 - 2 Tbsp. servings.
