Creole Gator Stew

Ingredients
Alligator, 1 lbGarlic, 6 cloves Red Ripe Tomatoes, 6 medium whole (2-3/5" dia) Mushrooms, fresh, 2 cup, pieces or slices Green Beans (snap), 1 cup Spinach, fresh, 2 cup Chicken Broth, 3 cup Basil, 2 tbsp Oregano, ground, 2 tbsp Thyme, ground, 2 tbsp Pepper, black, 1 tbsp Pepper, red or cayenne, 2 tbsp Salt, 2 tbspOnion powder, 2 tbsp Celery seed, 2 tbsp Biscuit, plain or buttermilk, 4 biscuit (2-1/4" dia)
Directions
Chop all the veggies and the gator into bite sized pieces. Put them all into a sauce pot, reserving the spinach. Add chicken broth, and spices. Bring to a boil. Add gator. Cover and simmer for 45 mins or until gator is tender. Stir in the spinach and allow it to wilt. Place a biscuit in the bottom of 4 bowls, and spoon the stew on top.
