Crustless Veggie Quiche

Ingredients
1 cup spinach, chopped1 yellow pepper, chopped1 red pepper, chopped1/2 cup daiya mozzarella shreds6 eggs1 cup almond milk3 oz sliced baby bella mushrooms
Directions
Chop spinach and peppers. Lay in bottom of a pie plate. Add sliced mushrooms. In a separate bowl beat eggs and add the almond milk (or any milk of your choice). Pour over the vegetables, shaking it a little to settle the egg towards the bottom. Heat oven to 350 degrees and bake 30-40 minutes until the middle is set.
