Spanish Rice/Quick Chilli

1lb (500g) lean ground beef or turkey1 14 oz (400g) tin of crushed tomatoes2-3 peppers (capsicum) slice long and thin1 large onion chopped5-6 mushrooms sliced1 can of kidney beans drainedsalt and pepper to taste2-3 tbsp low fat mexican cheese blend or chedder (shredded)1/4 cup not fat sour cream4 cups cooked brown rice
brown the meat in a deep frying pan or large saucepan.
add the vegetables and cook for approximately 5 mins. pour in the tin of tomatoes and kidney beans. Bring to boil then simmer. Salt and Pepper to taste. For a thinner sauce add half of the tomato tin fill with water.
Let simmer for about ten minutes. Serve over rice and add sour cream and cheese on top and ENJOY!
