clean eating potato soup

8 medium potatoes, cut into small pieces1 large onion7 cups low-sodium chicken broth/stock2 cloves garlic minced1 tsp. poultry seasoning1 tsp. basil1 tbsp. olive oil
saute the onions in the olive oil so they are soft and translucent.
peel and dice up the potatoes and toss them into the pot with the onions and add the broth and seasonings.
bring to a rolling boil and then reduce heat and allow to simmer, stirring frequently, til the potatoes are easily mashed up with a potato masher.
mash a bit and then take portions and blend until smooth, keeping some chunky according to personal preference, put it all together and serve!
