Creamy zucchini soup

Ingredients
2 zucchinies (360g) chopped1 red onion (250g) chopped3 laughing cow wedges5 1/2 cups of low sodium chicken stock1tbsp olive oilfresh ground pepper
Directions
In a large pot add onions, zucchini and olive oil. Cook until zucks are tender, then add chicken broth and 3 wedges of cheese. With hand mixer or blender puree until smooth. Sprinkle with fres ground pepper. Make 6 generous 300ml servings.
