Sweet Potato Chicken Stew

Ingredients
12 oz boneless, skinless chicken breast1 large sweet potato1 medium onion2 cups 99% fat free chicken broth2 cups fat free salsa1-1/2 cups frozen cornPinch of cuminDash of oregano
Directions
Dice the chicken, sweet potato and onion.
Add to the chicken broth, salsa, cumin and oregano into a slow cooker on low for 6 or more hours.
About 30 minutes before serving, add the corn.

    Scrumptious! I used La Victoria cilantro salsa, med. hot; I added more cumin & oregano than called for, plus lemon pepper & bay leaves. I used my own broth from boiling a whole chicken recently. Will definitely get more than 4 servings from this batch, so I'm counting 0.75 each when tracking. - 3/2/09

    Very tasty! I subbed frozen mixed veggies in place of the frozen corn just because I had it on hand. Otherwise prepared as directed. For me it turned out thin as for soup, so that's how we ate it. I could have added thickener or put on stove top to reduce down to more of a stew, but still yummy - 11/11/08

    Wow this is good. I browned the diced sweet potatoes and onions in a TB of olive oil before adding the other ingredients and added pineapple salsa instead of regular which I had on hand. I figured that sweet potatoes were good with pineapple so it must be good. It is! - 11/4/08

    substituted low sodium or salt free chicken broth and increased cumin and oregano. Yummy and not mushy in the crock pot on low setting but also cooks fairly quickly on top of the stove as well! - 11/4/08
