2 slices center-cut bacon, cooked, drained and crumbled2 egg whites, scrambled2 tbsp fat free mozzarella cheese, shreddedTwo 6-inch corn tortillas1 tbsp salsa1 tbsp fat free sour cream
1. Preheat oven to 375F. Spray a baking pan with nonstick spray.
2. In a small bowl, combine eggs, bacon, salsa and cheese. Mix well and set aside.
3. Place tortillas between 2 damp paper towels. Microwave for 15 seconds, or until warm and pliable.
4. Evenly distribute egg mixture between the two tortillas. Tightly roll each tortilla into a small tube, and place seam-side down in the baking pan. Lightly spray tops with nonstick spray.
5. Bake until crispy, 10 - 12 minutes. Serve with sour cream.
