1/2 small zuchini chopped1/2 small summer squash chopped2 tbs - 1/4 cup chopped onions2 tbs green/red bell pepper chopped1/4-1/2 chopped fresh mushrooms1/2 cup chopped fresh spinach2 TBS Olive OilWhole Wheat bread1/4 C shredded swiss cheese
Heat a skillet and add olive oil. Add onion, pepper and cook for two minutes to soften. Add zuchini and summer squash and cook again for a minute or two. Add mushrooms and spinach and cook until soft but still retaining color and form. Top on whole grain toast, add cheese to the top and broil on low until cheese melts.
Serving Size: two large servings to serve on whole wheat bread.
