1/4 cup granulated splenda1 teaspoon baking soda1 teaspoon baking powder1-1/4 cups whole wheat flour1/4 cup teff flour1/2 cup unprocessed wheat bran1 tablespoon ground cinnamon1 teaspoon ground ginger powder1/2 cup unsweetened apple sauce1/2 cup chocolate soy milk slender3 large egg whites1 cup mashed banana (about 2 medium)1 teaspoon vanilla extract1 tablespoon Molasses1 cup hot water1/4cup raisins, unpacked2 grated carrots
Makes 18 muffins 68 calories each
Preheat oven to 350
Measure splenda, baking soda, baking powder, flour, wheat bran,cinnamon,ginger and splenda into a large bowl. Stir well to combine. Add milk, egg whites, mashed bananas,apple sauce ,molasses . vanilla and water until flour is just moistened. Fold in Raisins and carrots
Use a non-stick muffin pan sprayed with canola oil spray. Bake @ 350 16 minutes until golden brown. and toothpick comes out clean Remove immediately from pan to cool.
