Cabbage Casserole

4 cups shredded cabbage1 cup grated carrot1/2 cup chopped green onions1/2 cup liquid egg substitute 1 cup skim milk6 tbsp shredded Swiss cheese1/2 tsp seasoned salt2 tbsp minced fresh parsley2 tbsp shredded Parmesan cheese
Using nonstick cooking spray, saute' the cabbage, carrot and onions until crisp-tender.
Transfer to a greased shallow 2-qt baking dish (a glass 8" x12" works well).
In a bowl, combine the egg, milk, Swiss cheese and seasoned salt.
Pour over the vegetables.
Sprinkle with the parsley and Parmesan cheese.
Bake, uncovered, at 350 degrees for 30-35 minutes or until a knife inserted near the center comes out clean.

WOW! This was really delicious and an excellent side dish for fish. Great way to use cabbage besides the same old cole slaw. We used 2% mozzarella instead of swiss. I peppered the cabbage/carrot layer pretty heavily before adding the liquid ingreds, since we love pepper. Our kids inhaled it! - 5/23/08

This was delicious! I am always looking for new ways to cook vegetables. My husband wasn't too thrilled at the thought of cabbage, but he liked this! I used a bit less cheese, and next time I would use a bit more seasonings (matter of taste), but the mix of the onion, cabbage and carrots was great! - 5/20/09
